… Some months later, when I spoke of my idea to Kalyani Chawla, founder of Rezon Luxury Silverware, she was immediately supportive of my vision and suggested I come on over to Rezon and take my pick of thali … it didn’t take me long, for the Rezon Thali design in the reel above was a matter of ‘love at first sight’, and what you are seeing is a live test run of the concept, the selection of recipes from DiyaSethi.com being the tuna tartare, hung yoghurt bocconcini caprese and gazpacho as palate cleanser – to be consumed in the order in which they have been written – served in phase one, followed by two main courses of a chicken in morel & porcini cream, chaperoned by the saffron risotto in the spirit of the risotto Milanese that is traditionally served with Osso Bucco, i.e. veal shin …
